Cantaloupe + Coconut Smoothie Bowl

I'm trying desperately to hold on to the last few days of summer, and this September weather is surely helping.  Unfortunately all the deliciously sweet summer fruits are coming to an end:/  I decided to whip up one last summery smoothie bowl that makes for a nice bright breakfast or can help curb that afternoon sweet tooth.  I love smoothie bowls because they feel more like a meal and are fun to decorate with a bunch of delicious toppings.  Try this tasty cantaloupe and coconut smoothie bowl and enjoy the last real day of summer :)  Enjoy!


1.5 cups cubed cantaloupe

1 small frozen banana

1/4 cup unsweetened almond milk

1 Tbs chia seeds

1 Tbs shredded unsweetened coconut

1 big handful ice cubes


Toss all ingredients in your vitamix or high speed blender and blend until smooth.  Top with fresh fruit, superfoods, nuts or any of your favorite toppings.
