Kale Pecan and Pomegranate Salad

It's still feeling quite wintery here in Chicago, and a little early for all the amazing spring greens to be sprouting up, so I decided to change up my typical daily salad and create this tasty Kale, Pecan and Pomegranate Salad.  This salad is loaded with a ton of vitamins and minerals, and kale isn't the only nutritional powerhouse.  Pomegranates are extremely high in antioxidants, pecans have good fats and are high in Vitamin E and nutritional yeast is loaded with B Vitamins, folic acid and is surprisingly high in protein.  If you haven't had nutritional yeast, or have never even heard of it you're in for a treat.  It's very well known in the vegan community as a healthy substitute for cheese, and can be found at most health food stores.  It's a flaky, powdery like substance that has a cheesy, nutty and rich flavor that can really elevate even the simplest of dishes.  I grew up with my sister sprinkling it all over popcorn, and now I use it as a seasoning on some dishes, and as a substitute for cheese in this salad.  It blends nicely with the nutty flavor of the toasted pecans and the pomegranate seeds add a nice pop in color and in flavor.  This is a simple and delicious salad recipe that makes about 4 servings but can easily be doubled for a larger group.  Enjoy! 


1 head of green kale

1/2 cup of pecans

2 Tbs nutritional yeast

2 Tbs lemon juice

3 Tbs Olive oil

Seeds from 1/2 pomegranate

Salt and pepper to taste


1. Preheat the oven to 350 degrees

2. Place the pecans on a baking sheet and bake for 8-10 minutes then remove from oven and let them cool

3. Roughly chop the nuts into small pieces and place in a bowl with the nutritional yeast

4. Tear or chop the kale into desired bite sized pieces and place in a large salad bowl

5. Cut the pomegranate in half and pop out all the seeds (this is easiest to do with your fingers, they should pop out without much effort)

6. Squeeze the juice from 1/2 of a lemon and whisk it with the olive oil and salt + pepper

7. Toss the all ingredients + the dressing in with the kale and mix thoroughly

8. Plate, eat and enjoy!
