Raw Chocolate and Date Balls

For those of you who need your daily chocolate fix this recipe is a great way to indulge without all the guilt.  These little chocolate and date balls are packed with B vitamins, fiber, protein, antioxidants and good fats.  They only include 5 simple ingredients, and take just minutes to prepare.  I rolled these in unsweetened coconut flakes, marcona almonds and pistachios, but you could really choose whatever topping you like or just keep them as is.  Enjoy!

1 cup pitted dates

3 Tbs organic raw cacao powder (I used Navitas Naturals)

3 Tbs unsweetened shredded coconut flakes

1 tsp coconut oil (melted)

2 Tbs Pistachios

1-2 Tbs water

Add all ingredients into a food processor or vitamix and blend until everything is mixed well.  Slowly add 1-2tbs of water, you want the batter to be moist but not liquefy so add water accordingly.  Put batter into a bowl and start rolling into small balls.  This recipe makes about 10 balls.  Next roll the balls in a small bowl with your desired toppings.

Place the balls in an airtight container in the fridge and let them set for an hour or so until they harden.  They should keep well in a sealed container in the fridge for 4-5 days.
