Tomato and Brown Rice Bowl

Pretty often near the end of the week when my refrigerator is looking bare I’m forced to get a little creative with my afternoon meals. This tomato and brown rice bowl happens to be one of my favorites. I had some brown rice with stewed tomatoes left over from the previous nights meal so I used that as my base. It’s just a cup of boiled brown rice and a can of stewed tomatoes (I used my brothers jarred tomatoes from his garden….delish!) The rest of the ingredients are up to you, but this is what I put together. This is a healthy, nutrient packed meal that can be enjoyed at any time of the day.

Ingredients
1 cup brown rice and tomatoes
1 egg
Shredded red cabbage
1/2 avocado
1 scoop plain yogurt

Directions
Re-heat the rice and tomato mixture until hot and put it in your bowl.  
On the stove top fry an egg until over easy.
