Gingery Green Drink Recipe

One of the easiest and quickest ways to get a few servings of vegetables down is through juicing or making smoothies.  When you juice you tend to lose a lot of the fiber from the vegetables so I like to make green smoothies as much as possible.  Here is a refreshing ginger green juice recipe that I made in my Vitamix.

Blend the following at high speed until smooth

Ingredients 

2 small carrots

1/2 apple

1/2" knob of ginger, peeled

1/2 cucumber peeled

1 large handful spinach

1 cup coconut water (add more if you want a thinner consistency)

Pour over ice and enjoy :)

Drink your greens!
