Almond Banana Pancakes
I have always been a pancake lover, but realize they are not the healthiest of breakfast foods. Instead I’ve created a healthier alternative to the traditional pancake recipe, using almond flour instead of all-purpose and swapping out the sugar for a touch of honey. You can add any toppings you wish to, I love mixed berries or coconut flakes. These are a simple and delicious treat to be enjoyed for any meal!
1 Cup Almond Flour
2 Organic Eggs
1/3 Cup Plain Yogurt
1 Ripe Banana Smashed
1/4 Cup unsweetened Coconut (if you like them a little sweeter feel free to use sweetened)
1 Tbs Honey
1 Tsp Cinnamon
Add all dry ingredients and stir until mixed well. Smash banana, eggs, honey and yogurt together. Add wet ingredients to dry ingredients and mix thoroughly. Heat 1 Tsp of Coconut oil in a pan and place 1/4 cup of batter in pan.
Cook a few minutes at medium heat, until batter starts to bubble. Flip and cook a few minutes on other side. Sprinkle your favorite toppings and enjoy! This recipe makes approximately 6 medium-sized pancakes.
